Crafted with passion on the Mornington Peninsula, the Melone brothers have taken old Italian methods passed down from their grandfather to produce premium quality spirits. How Is Rocky Jones Gin Made?
We use traditional methods that have been passed down for three generations. This includes letting our eight botanicals sit with the neutral spirit for 24 hours. Next, we hand peel citrus and vapour infuse it. We then let our copper still do the work. Throughout distillation, we take cuts to ensure only high-quality gin is collected. Finally, we dilute the gin with rainwater and filter the product before bottling. Our goal is to produce premium quality gin at an affordable price for the Rocky Jones family.

Our tours include tutored tastings, plenty of beer and the opportunity to get up close and personal with the brewers and their facilities. The breweries we visit include those on the boutique scale, right through to the major producers. Each brewery tour package includes a ride accommodation that will take you to all 3 or 4 breweries included in the package and back to the meeting place at the end of the tour. The package also includes a light snack and a bottle of water.
The biggest thing to understand in any brewery is that something is always about to go wrong. However, I know that when I began brewing, I didn’t truly understand how gracious the brewing industry can be. So many breweries are in direct competition with each other, yet we tend to drink (and appreciate) the beers that our friends are making.

Our Ocean Grove Lager is a relaxed, easy-drinking, no-fuss lager specially crafted to represent our beachside hometown. This is a simple and laid-back Brewi!
PALM – PALE ALE
Palm is an Australian pale ale. With a medium fruity hop aroma and slight bitterness, this Brewi is refreshingly easy to drink and will have you coming back for more!
ISLAND – RED ALE
This Brewi is a full-bodied Irish Red Ale with a smoother finish than a Liam Neeson punch line. The moderate malt characteristics blend seamlessly into caramelised toffee notes on the pallet.
Some would say “it has a particular set of skills” for quenching your thirst.
WAI-KOULA – GOLDEN LAGER
Wai-koula, the Fijian translation for Golden Water, has been inspired by traditional German-style lagers. It is refreshingly crisp with hints of citrus and smooth spice on the palate. The perfect way to knock off after a surf or sit on the beach watching the sunset.
KOFE - BROWN ALE
Kofe is Fijian for coffee, and this well crafted brown ale is just like the first coffee of the day. A malt driven ale with quality coffee beans provided by Hello Coffee in Apollo Bay, it’s rich and toasty!
BARWON HEADS BITTER
An Extra Special Bitter brewed with hops gives this traditional English bitter a balanced feel. Pairing Victoria’s Pale malt with a bold crystal malt gives this Brewi a biscuit finish with medium bitterness throughout.

A Bit About Our Beer
We brew our ales using Australian & New Zealand grown and malted barley as our base grain and specialty malts from the UK. In addition, we use old-world English hop varieties for a genuinely traditional flavour. All our beers are designed for easy drinking and are mid-strength in alcohol. These ales are also the base recipes from which we distil our single malt whiskies.
Speaking Of Spirits
Our spirits are distilled in hand-beaten alembic copper pot stills. You can see them for yourself when you visit our Cellar Door. The 30 litre and 100-litre pot stills take pride in place as they distil our gins. In addition, we have our 400-litre Alembic spirit in the brewery, and 1200 litre Knapp Lewer wash still, distilling our single malt whiskey.

The Story
Bass and Flinders Distillery was founded in 2009 on the Mornington Peninsula with a passion for adventure and a desire to create a range of high quality, artisanal gins, brandies and liqueurs that truly reflect our home and heritage.
Proudly the first distillery on the Mornington Peninsula, our original inspiration was drawn from a love of classic brandies produced in France. Using the same traditional production techniques, we set out to produce a premium aged spirit, our Ochre brandy, that proves just how good Australian brandy can be. Our location in the wine-growing region of the Mornington Peninsula provided the perfect setting to pursue our dream.
Our Distilling Process
Attention To Detail
To achieve a world-class spirit takes patience. It requires creativity and attention to detail. At Bass and Flinders Distillery, we are extremely proud of our unique approach to producing quality, handcrafted, premium Australian spirits. Our attention to detail means we choose to make our own grape-based eau de vie spirit (French for ‘Water of Life’), which forms the basis for our entire product range. Our spirits are crafted right here at our Distillery in Dromana, located on the beautiful Mornington Peninsula.
We believe quality starts with the grape, so all of our spirits - from gin and brandy to liqueurs - have been distilled from wine sourced from a single Victorian vineyard. This allows us to work closely with our winemaker to maintain consistency in acidity, sugar levels and ripeness of fruit in order to control the entire production process from vine to bottle - this is our definition of craft and quality. Our batch-distilled eau de vie spirit showcases the rich, ripe aromas expressive of the terroir where the grapes were grown, and wine is sourced from, creating additional layers of flavour, texture and viscosity to all of our spirits, including our gins.
European Inspired
In pursuit of these unique, contemporary flavours and inspired by European production methods for some of the world’s finest brandies, we make our eau de vie using a traditional Charentais double distillation method using a gas-fired, copper Alembic pot still. It’s a labour of love requiring true craftsmanship. We believe this small-batch process allows the finest aromas, individual characteristics and fruit flavours to reveal themselves.
Distinctly Australian
Our philosophy is to use nothing artificial and to produce small volumes of high-quality spirits. Our distillery is making over 3000 unique gins each year with the help of the many gin enthusiasts attending our weekly Gin Masterclasses, and we’re constantly exploring thousands of native botanicals found across our vast Australian outback to create bright, fresh spirits. We are passionate about creating distinctive gins, brandies and liqueurs and work closely with local growers to source essential, seasonal ingredients such as locally harvested cherries, truffles and vine leaves for some of our most-loved gins.

Have you ever tried Mulla Mulla? Did you sample the spices of cinnamon myrtle or enjoy the smooth texture derived from sandalwood nuts? Alongside other traditional gin botanicals, unique ingredients such as native strawberry gum, purple vetch, locally foraged kelp, coastal saltbush, samphire, and many more are carefully chosen to reflect the flavours of our home and heritage. And let’s not forget the most curious ingredient of all, the pheromones of Australian ants! Hand-collected at the sustainable Wooleen station in central Western Australia, resulting in a gin with a flavour that expresses Australia’s rich bio-diverse landscapes.

The venue has 12 taps serving 11 beers and a cider. A full range of local wines and craft spirits is also available. A range of snacks is available, including local pies and quiches and patrons can BYO food or order in.
The venue has an "industrial chic" ambience. Open Wednesday to Sunday 12:00pm to 9:00pm or 10:00pm. All Biersal beers are available for take-away in refillable glass bottles. A broad range of merchandise is also available. The venue is family-friendly, with a basketball ring and a range of table games.

The family-owned and operated orchard has been producing high quality, Bio-dynamic (enhanced organic) fresh fruit, apple juice, apple ciders and apple cider vinegar for the local region and beyond.
The family continues to nurture and nourish the Demeter-certified orchard, creating a unique range of Bio-dynamic products, inviting the public to visit their Farmgate Store and Cider Lounge.
Our Venue
Our venue is unique to the Mornington Peninsula, a once-renowned region for apple growing. Our venue is a celebration of the apple-growing history in our local area and our beloved family. What was once an original wooden cool-store, built on the orchard in 1945, has been transformed into our Cider Lounge for you to visit, enjoy our craft beverages and share-plate style lunch.
You will find our Farm-gate Store & Cider Lounge amongst our 50+-year-old apple trees on your visit. We have transformed what was once a packing shed into our beautiful Farm-gate Store, where you can purchase our fresh produce and apple products. The Cider Lounge, which was once used to store hundreds of wooden crates of apples, has been converted into a dining area where you can cosy up to our fire in Winter with a hot mulled cider and enjoy our vibrant, vine-covered courtyard with our apple-themed cocktails in Summer.
Our Apples
The core focus at Mock Orchards lies intending to our A-grade apple varieties growing in the orchard. Being certified Biodynamic, produce has been grown to the Australian National Standards of Biodynamic Farming. In addition, we are certified by the Bio-Dynamic Research Institute, ensuring the use of environmentally friendly, ecologically safe, biological methods to activate and nurture the soil, plants and animals within nature's organisation, without the use of artificial chemicals, fertilisers, genetically modified organisms or any unnecessary additives.
The Mock family have been growing apples for five generations. Walter Charles and Wilma Elizabeth Mock moved the family to Red Hill's well-known apple-growing area in 1960 and converted to the Demeter Biodynamic Farming Method in the 70s.
Today our orchardist is Neville Mock (pictured), Wally and Wilma's 4th Son; Neville completed an apprenticeship in fruit growing with his father back in 1981; on completion of his studies, Neville achieved the award for “Outstanding Apprentice” from the Industrial Training Commission of Victoria and later he went on to win Victorias “Farm Entrepreneur of the year” in 1999.
Our Ciders
At Mock Red Hill, we produce modern, new world style craft ciders from our single Orchard at Red Hill, Victoria, with only one batch of each variety made per year. All our ciders are produced using a belt press and contain no added sugars, colours or flavours. We also produce a range of fresh non-alcoholic beverages. All of our Ciders and Juice are Demeter Certified Biodynamic and are made from 100% fresh fruit grown on our farm. Mock Red Hill is a member of Cider Australia, and our ciders have been approved to carry the 100% AUSTRALIAN GROWN TRUST MARK. Our products also carry the Authentic Provenance Trademark "MPP" - Mornington Peninsula Produce. The MPP Certified Trade Mark is a guarantee of provenance, giving consumers confidence in supporting their local farmers.
